Franco, originally from Oliena, is a chef and sommelier as well as an experienced and hospitable landlord. «I have always tried to propose a creative cuisine, even if I like to devise my preparations according to what our territory offers, but without fossilization, because every part of the world has its own quality products. It is about knowing how to search and combine them in the right way ».
